Tides Inn hotel Alaska

Halibut or Red Snapper Fish Kabobs

1-1/2 lbs. Alaska salmon, haAlaska Fish Barbecue libut or cod

1/2 C vegetable oil

1/4 C soy sauce

1/4 C lime juice

1/2 C minced green onion

1 generous tablespoon dijon mustard

1T minced garlic

1 tsp. lemon pepper seasoning

chunks of green pepper, zucchini, yellow summer squash, onion and cherry tomatoes

Cut up fish into 1 to 1 1/2 inch cubes.  Combine all ingredients except fish and vegetables.  Add fish and refrigerate for one hour.  Alternate fish and vegetables on skewers. Broil or grill over moderately high heat, turning regularly and basting with sauce, about 10 minutes total cooking time.  Serve with rice pilaf.  Makes approximately 4 servings.

I was introduced to this recipe while on vacation on Chase Island in New Hampshire.  I immediately realized how wonderful it would taste using Alaskan seafood.
